A Perry washed rind cheese from famous award-winning cheesemaker Charles Martell. Aromatic, pungent and with a delicate flavour, the velvety, smooth interior is almost spoon-able with a glistening, orange-yellow rind. This wonderfully eccentric cheese is created and produced in Gloucestershire by an equally eccentric, quintessential English gentleman, Charles Martell. Made from cow's milk and washed with perry (an alcoholic drink made with a rare variety of pears), this soft textured brown/pink rind cheese has a pungent smell. Stinking Bishop cheese, despite its alarming name, is mild in flavour and quite delicious. Aptly named after the variety of Pears Charles uses to create the Perry that he washes the cheeses with, the smell arises from bacterial action on the Perry washed rind. The cheese is supported with a beechwood lath and is wrapped in waxed paper.
