The one and only Drniš Pršut, from Croatia. Most
notably served at HM Queen Elizabeth II’s wedding (1947) and
coronation (1953) ceremonies. Traditional Croatian dry-cured ham,
smoked - from the mountainous region of Drnis. Ancient Romans were
the ones who began curing and salting their ham along the
Mediterranean coast, calling is ‘perexuctus’. Only superb quality
thighs are used for this delicacy; they must be sourced locally and
weigh more than 11-16 kilograms. The ham is salted with both fine
and coarse sea salt, pressed with weights; after which it is left
to be smoked by smoldering beech trees, oaks or hornbeam. The
smoking process is a distinction compared to the prosciutto
originating in Italy. Following that, the prsut is placed outside
in the wind to be thoroughly dried, for at least 12 months. Its
characteristic aroma, flavour and texture is attributed to a unique
mixture of two distinct local types of wind that the ham is left to
be dried by. The cold and dry Bora, coming from the north-east and
the warm and humid Jugo, arriving from the south - make for a
balancing act, allowing the prsut to mature into an extraordinary
delicacy. About the Producer Dimmes is a renowned prsut, panceta
and charcuterie merchant from Drnis, Croatia. They are most proud
of their unique geographically-protected products like Drnis Prsut
(served at HM Queen Elizabeth II's wedding in 1947 and coronation
