Traditional Croatian dry-cured smoked pork loin - from the mountainous region of Drnis. The meat must be sourced locally and be of premium quality. Pecenica is salted with both fine and coarse sea salt, pressed with weights; after which it is left to be smoked by smoldering beech trees, oaks or hornbeam. The smoking process is a distinction compared to the lonzino or bresaola originating in Italy. Following that, the pecenica is placed outside in the wind to be thoroughly dried, for at least 12 months. Its characteristic aroma, flavour and texture is attributed to a unique mixture of two distinct local types of wind that the ham is left to be dried by. The cold and dry Bora, coming from the north-east and the warm and humid Jugo, arriving from the south - make for a balancing act, allowing the pork loin to mature into an extraordinary delicacy.
