A Unique and delightfully pretty hand-made cheese wrapped up in nettle leaves giving a subtle mushroomy flavour. Creamy under the rind and slightly crumbly in the core, it is a young cheese with a fresh, slightly lemony tangy taste. Made by hand in open round vats using pasteurised milk from their grass fed herd of Holstein/Fresian cows, Cornish Yarg is a delicious semi-hard cheese from Lynher Dairy, Cornwall, in the South West of England. After pressing, the nettle leaves are picked from the hedgerows and woods on nearby farms; they are frozen and then applied individually by hand. The leaves are carefully brushed onto the cheese in a traditional pattern and they attract wonderful natural occurring moulds of various colours, which help the cheese ripen. As the cheese matures, these edible nettles impart a delicate, slightly mushroomy taste. The final product has an attractive, lacy pattern of leaves in blue and green, giving the cheese a very unique appearance. The recipe for Cornish Yarg was invented by Alan Gray. When trying to find an appropriate name for the cheese, a lateral-thinking friend suggested that 'Gray' spelled backwards sounded very Cornish and the name stuck.
