Vacuum-packed sliced lomo is the muscle that runs
along the spine of the Iberian pig, a gourmet product like ham.
This lomo comes from Iberian pigs of the Jabugo area in the Aracena
mountains, situated in the southwestern region of Andalusia in
Spain. It is a natural park as well as World Biosphere Reserve. The
pigs must be at least 50% pure Iberian in their race to be named as
such. Breeding must also take place under an extensive regime where
the animal can move freely and have physical
exercise.
