made with bones. The bones can be roasted first; this enhances the
colour and deepens the flavour of the broth. There may be a small
amount of meat adhering to the bones but generally they are clean
of meat. A good bone broth will be simmered very gently over a low
heat for a period of days. It is the slow, long cooking time that
