Young Buck blue cheese is a delightful raw milk blue
cheese from Northern Ireland has a perfectly rounded lingering
character. With its bluey green veins and yellow hued paste it is a
modern cheese that will soon become a classic! Michael Thompson is
the first raw milk blue cheese maker in Northern Ireland. Learning
his trade in the famous Arcadia deli shop in Belfast, studying at
the School of Artisan Food, working with Neals Yard, the Montgomery
family and a stint of raw milk making Leicester cheese at
Sparkenhoe Farm, Michael’s hobby blossomed into a craft and master
maker. Raising the funds through crowdfunding, Michael was
able to set up and in 2013 he made his first Young
Buck.
